Modish Recipies

As you know, dealing with food allergies and intolerances makes cooking a chore at times. In this section we are going to be providing you with recipes and suggestions for cookbooks which specialize in being allergen free.  My son is allergic to Dairy, Wheat, kiwi, peanuts, food additive & coloring, and corn. I will be trying to update the recipes every week.  I am not a dietician or in the medical field at all so please keep your eye on any items which you think could possibly react with your children and subsitute accordingly. Thank you.

Before I start the recipes today I just want to mention the GMO’s (or genetically modified organisms). These foods can create allergies in people who wouldn’t normally be allergic to these types of foods. For example to make a tomato easier to transport they genetically splice it with the DNA of a flounder to make it cold resistant. What if you are allergic to flounder? There are hundreds of these products flooding the market, so beware if you are buying strawberries (or anything for that matter) that have been mixed with something you or your children are allergic to.  If you are buying from the grocery store read the PLU labels. If the five-digit PLU number starts with "8," the food is either genetically modified or genetically engineered. Don't buy it. Please note that all fruit has a four-digit PLU code. This number tells you what kind of fruit it is. If the PLU code has five numbers, the first number represents either organic (8) or genetically modified (9). Also in the summer you can shop at farmers markets, join a food co-op or grow your own food. As a consumer we make the vote, so learn what is out there and how to avoid it. If nobody bought the junk or the GM’s they wouldn’t be on the shelves, they are there because we buy. Just some food for thought.

Allergy Friendly Banana Cookies

Ingredients

Directions

Pre-heat oven to 400. Mix all wet ingredients. Mix all dry ingredients together. Mix together. Make round cookies with ¼ scoop on a baking sheet. Bake for 10 minutes. Take out and let cool on cooling rack.

 Chunky Monkey - MODISH STYLE

1 banana

2 tbsp carob powder

1 tbsp pea butter

1 can organic coconut milk

Handful kale

1 tbsp ground flax

1-cup ice

Mix all ingredients together in Blender except for ice. Blend until smooth; add ice and blend again till sooth. Serve with straw and some carob chips on top (if you are celiac avoid the carob chips (not powder) because some carob chips contain barley).  Carob is a great substitute for chocolate because it does not have caffeine. So this is great for nursing mothers and children.

Kale is such a nutrient dense food I try to add it to my kid’s foods as often as possible. It has nutrients such as vitamin A, manganese, vitamin E, fiber, chlorophyll, and a surprising 93.6 mg of calcium per 1 cup. Pea butter adds a boost of protein, and coconut milk adds good fats for growing brains. Your kids will go bananas for this smoothie.
